Ed's Bread is slowly made by hand. The dough is mixed and kneaded the day before, proofed overnight, then shaped by hand and baked the morning of your delivery.
In bread baking, a long, slow ferment (or proofing) allows the flavors of the wheat to develop and stand out. The mass-produced bread used in most sub shops is mixed, kneaded, proofed and baked all within a few hours (or worse, the unbaked loaves are pumped full of chemicals, put in a deep freeze then shipped to your local chain). Those fast-made loaves also require un-natural improvers, like hydrogenated oils, chemicals, and laboratory additives to retain freshness.
Ed's Bread is old-fashioned, and completely natural. It contains only Oregon-milled wheat flour, water, my own Glisan Street starter, and kosher salt. The yeast in the starter is completely wild and natural. The slow and natural process keeps the loaves fresh longer naturally. Each batch of dough is well-kneaded to give it body and make it chewy, and baked to give each loaf a tender crust.
Every submarine is built on a genuine handmade loaf of Ed's Bread.
